Today, you don't have to be in Mexico to celebrate Cinco de Mayo. With these easy-to-make and delicious recipes you can bring the Mexican spirit right to your home. All you need is just a few ingredients, party spirit, a little mojito and some good friends to make this a day like no other! Here are the top 5 recipes, including homemade tortilla chips and a few zesty dips that will spice up your day:
3/4 to 1 cup canola, or corn oil
Cut each tortilla into 6 triangle-shaped wedges, bake or fry them (whatever suits your fancy), place them on a paper towel to dry and to remove excess oil, and serve them hot with some of the following dips...
1 pound tomatillos, husks removed and rinsed
1 serrano pepper (or 2 jalapeno peppers)
2 unpeeled garlic cloves
1/2 cup fresh cilantro
1/4 cup diced white onion
2 tsp. lime juice (optional)
large pinch of salt (to taste)
Dry roast the tomatillos, onion and garlic first. Peel them and continue dry-roasting the other vegetables. When they are done, mash them with a fork and season with lime juice, salt and pepper.
4 fresh tomatoes
1 medium onion
4 cloves of garlic
1 jalapeno, minced (remove the seeds if you want it milder)
2 banana peppers,
1 handful of fresh cilantro
juice from 1 lime
salt and pepper, to taste
Chop all the ingredients, and be sure that you let the juice from the tomato drain for a few minutes. After mixing all the ingredients, leave the mixture in the fridge for 30 minutes so the flavours can all blend in together.
4 ripe avocados
1/2 cup red onion,
2 roma tomatoes,
1/4 - 1/2 cup cilantro,
1 lime, juiced
1 tsp. minced garlic
salt and pepper to taste
Remove the pit from the avocados, place them in a bowl and mash them with a fork. Chop the rest of the ingredients and mix them with the avocado. Spice it with lime juice, salt and pepper.
2 tbsp. butter
1/4 cup finely chopped onion
1/4 tsp. crushed garlic
2 tbsp. all-purpose flour
1 1/4 - 1 1/2 cups whole milk
8 oz. finely-shredded Monterey Jack cheese
Fry the garlic and the onion in the melted butter, add the flour and pour the milk while whisking vigorously. Add the Monterey Jack cheese to melt, and leave it to cool down before serving.
